The Mondo Tuna Sandwich

This morning I woke up at 6 o’clock and as usual headed to my residence gym.  However, today someone else was actually running on the treadmill!

This is the second time I’ve encountered someone doing an early morning workout in my dorm.  Kudos to them for getting up so early, but seeing as there is only one treadmill in the building, I resigned to my room and hit up the P90X Kenpo Cardio.

Breakfast was a joy to eat and prepare.

This morning’s mix was 7 strawberries, a handful of blueberries, a slice of cantaloupe, 1/4 cup of granola (from Bulk Barn) and 1/4 cup of Vanilla organic yogurt.

 

 

 

All mixed up together, it was the best breakfast that I’ve had in few days.

 

 

I spent the rest of my morning doing a bit of schoolwork and then made lunch…which accidentally turned into the supersize me version of a healthier tuna sandwich.

 

Here is 2 slices of pumpernickel bread, tuna with yogurt (the mayo replacement), a few huge leaves of lettuce, some tomato and cucumber slices.

 

 

Unfortunately, because I was rushing, I kind of over portioned out everything.  And then had to devour it in minutes before heading out the door.

 

 

We’ll try this again sometime later this week, with maybe less tuna and more time.
